The best Italian meals are usually had in a simple, tiny trattoria such as this one, where there's a line out the door of businessmen, farmers, and a few knowledgeable tourists all waiting for their turn at the hearty Tuscan dishes. Also, there an open kitchen. I've always felt you can really trust a restaurant with an open kitchen.
Its ribollita (a classic soup of Tuscan beans, tomatoes, and day-old bread) is bested only by the crespelle (pasta crepes wrapped around ricotta cheese), and its involtini (thinly pounded veal wrapped into a tune around vegetables and sauteed) are exquisite.
This is also a great place to sample a bistecca fiorentina without spending a fortune (they often have set-price menus for €16–€19).
Le Mossacce believes in food and nothing but the food, a place to get in, eat, and get out. It is not for lingering or for expectations of effusive friendliness from your waiter. In fact, they make a point that, as soon as you're finished, the owner should bellow "Fuori uno, avanti un'altro!"—out with this one, let's bring in another.
This has absolutely nothing to do with rushing you or being rude (though it certainly sounds like that at first). The idea is this: they don't take reservations, but they don't want to turn anyone away, either. They want everyone who comes in the door to leave satiated and satisfied—and you can help by clearing out so someone else can have your table.
