Florence no longer has a glitterati or intellectuals' cafe scene, and when it did—from the late-19th-century Italian Risorgimento era through the dolce vita of the 1950s—it was basically copying the idea from Paris.
Although they're often overpriced tourist spots today, Florence's high-toned cafes are fine if you want designer pastries and hot cappuccino served to you while you sit on a piazza and people-watch.
For people-watching, Piazza della Repubblica is lined with the most historic cafes, including Giubbe Rosse (no. 13-14r) and Gilli (no. 39r) where intellectuals and artists have been meeting since the 19th century.
Or you can cozy up to a cappuccino at one of Rivoire's tables set right on the main Piazza della Signoria (at Via Vaccereccia 4r) with a sweeping view of its stage-set statues and towering Palazzo Vecchio castle.
At any Italian cafe, bar, or gelateria, you don't just saunter up to the bar and order your cappuccino, Campari, or two scoops of cioccolato.
Go first to the cashier (sometimes at her or his own little counter in a corner) to order what you want and pay for it.
Only then can you take the receipt back up to the counter, where you put the receipt down (traditionally along with a small coin as a tip) and repeat your order to the barrista.
Unless, of course, you sit down for table service (which costs more), in which case you will get a waiter instead and pay at the end.
Silly? Yes, but that's how it's done.
